Food week recipes

If you were inspired by Sanjeev Kumar's curry recipes during BBC Radio Stoke's food week then perhaps you could recreate them in your own kitchen.

Grilled King Prawn with Ajwain

Ingredients for four people
6 King Prawns
½ teaspoons ajwain
40 grams garlic
½ teaspoons turmeric
½ teaspoons chilly powder
1 tablespoon lemon juice
Salt to taste
Oil to shallow fry

Grilled King Prawn With Ajwain

The Grilled King Prawns smelt fabulous

1. Do not remove the shell; give a deep slit on the prawn exposing the black vain. Wash and flatten. Pat dry.
2. Season with salt, chilly powder, turmeric powder, ajwain and lemon juice. Keep aside for 10 minutes.
3. Peel and chop garlic. Put equal amount of garlic on each prawn.
4. Heat one table spoon of oil on the griddle. Cook prawn till done.
5. Sprinkle green coriander and serve hot with choice of chutney.

Nariyal Malai Chicken

Ingredients for four people

1 kg Chicken fillets
2 green coconut
600 grams onion
600 grams tomato
40 gram ginger
20 gram garlic
2 Green chilies
Fresh mint
½ teaspoon turmeric powder
½ teaspoon chilly powder
Salt to taste
Sugar a pinch
200 ml cream .
Juice of one lemon

The whole spices

2 sticks cinnamon
4 cardamoms
½ teaspoon cloves
2 Bay leaves
½ teaspoon peppercorns
2 star aniseed
75 ml oil
Fresh coriander

The finished dishes

Why try to make them for yourself?

The Chicken:
Trim any fat from the chicken and cut into one-inch cubes.
The Vegetables:
Peel and chop onions, chop tomatoes, scrap and chop ginger, peel and chop garlic.
Chop green coriander. Chop mint.

Cooking:
1. Heat oil in a heavy bottom pan, add the whole spices, when starts crackling add chopped onions, ginger and garlic. Cook till the onions are golden brown. Add turmeric and chilly powder. Stir for 30 seconds.
2. Add chopped tomatoes. Cook till the masala starts leaving the oil.
3. Add chicken, salt to taste and sugar. Bhuno (stir fry) for two minutes. This is called shearing of meat , the meat will be cooked from out side and in the process of cooking all the juices will be retained. Hence a better taste.
4. Add 4 cups of coconut water and its cream. Cook till the gravy is thick and the chicken is cooked. Finish by adding cream and mint, stir and add lemon juice.

Serve hot in a coconut shell and sprinkle green coriander.
This dish goes very well with Indian bread or steamed rice.

Kesari Phirni

A very light rice pudding, Recipe for 4 people

Ingredients
80 grams rice
1 Litre milk
8-10 Green cardamoms
200 grams sugar
A few drops of rose water
10 grams almonds
10 grams pistachios

1. Wash and soak rice for 1 hr. Discard water and crush the rice to
     powder.
2. Take out seeds from the green cardamom and add to milk
3. Heat milk in a heavy bottom pan reduce to 3/4.
4. Add rice powder and cook till it goes to a thick paste. Add sugar and rose water stir and cook for another 5 minutes.
5. Take off the fire and set in individual serving dishes, cool and put in the fridge.
6. Serve cold garnished with almonds and pistachios.
